The last two months have been the most difficult I have ever experienced in this industry. Closing a restaurant like Bilson's in the circumstances we found ourselves in was unexpected and extremely distressing.
I would like to thank our many friends who supported us through this tough time and I also extend my sincere apologies to those who suffered financially as a result of our restaurants going into liquidation.
Putting those weeks behind us, we are re-opening Number One Wine Bar & Bistro next week on Thursday 24th November.
I have gathered together a team that includes my daughter, Lily, who was Assistant Manager at No 1 and has recently returned from working at The Waterside Inn in England. She will be managing the front of house with Eddy, my son, who will be managing the bar. Eddy has worked with Georges DuBoeuf in Beaujolais as well as Chateau Talbot in Bordeaux and Yangarra Winery in McLaren Vale. Together with a small team in the kitchen assisting me, the restaurant will have a new energy to bring back and excite our loyal customers as well as inspire a new clientele.
I am very excited about returning to the kitchen to create new experiences. If you want to see some recent fantasies read the October issue of Gourmet Wine Selector which features a dinner I prepared in June to showcase a range of Penfold's Museum wines spanning five decades which was held at the Australian Embassy in Paris.
Number One will feature some of my classic dishes as well as new dishes inspired by our local growers and organic markets. I guess 'relaxed' will describe your experience while 'inspired' will describe mine. The menu will be small and change regularly as I spy products and seafoods that I think you will enjoy. The wines will be moderately priced in general but my friends in the wineries have promised me some aged jewels if you feel like a treat.

Number One will be open for lunch and dinner Monday through to Saturday and we look forward to helping you celebrate this festive season and beyond.
